Recipes that delight a diabetic

I’ve known K.R.Prabhurajan uncle ( my friend Remya’s dad) since 1995. In the time that I have known him, I’ve seen him emerge from various serious health challenges and carry on undeterred. I’ve seen him run his ‘Taste of India’ – a catering initiative in Chennai. I’ve even volunteered with his food stall at a couple of locations like in Ethiraj College, etc.

I’m grateful to uncle for sending me a copy of his useful book and for always being kind and motivating. His cheerful demeanor in the face of so many odds is what one always remembers about uncle.

This cookbook contains vegetarian recipes. Eggs are included in some recipes. I’ve shared a page from the book to show you the format of the cookbook. No copyright infringement is intended. Apart from sharing recipes, uncle has also shared his wisdom ( Uncle is in his late 80s) on how to live a meaningful life and lead it with dignity and peace.
